Expertly crafted Vietnamese phin filter coffee — now in San Diego.
From Resilience to the Phin: My Journey to Phinology
I didn’t start out dreaming of opening a coffee shop. In fact, life’s hardships simply brought me here.
I was only three when my mother carried us across an ocean to America — two small children and a suitcase. My mother, a single parent who had been a nurse back in Vietnam, was my anchor. She worked tirelessly to raise my older brother and me, teaching me by example that when life gets difficult, you don’t quit — you keep on trying.
There was a time in high school when I felt completely lost. I was close to dropping out, unsure of who I was or where I belonged. In that moment of struggle, I thought of my mother. I realized that the strength she showed — the way she cared for others — was a gift I had inside me, too.
That realization sparked a new path. I began my journey in healthcare, starting as a CNA, moving up to become an LVN, RN, and eventually earning my degree to become a Nurse Practitioner. Those years were filled with long shifts, endless studying, and a constant need for focus. During the night shifts, coffee became my lifeline — the quiet partner that helped me stay present for my patients.
In 2012, I went back to Vietnam for the first time. That trip changed the way I saw coffee forever. I was introduced to the bold, slow, and intentional process of the phin filter. It wasn’t just a caffeine boost; it was a ritual of patience and a reflection of a culture that knows how to find beauty in the slow moments.
When I returned to San Diego, that love for Vietnamese coffee grew. I started sharing it with my coworkers at the hospital during our toughest times, and I saw how a simple cup could offer a moment of warmth and connection.
Phinology Coffee is the evolution of that journey. It is a tribute to my mother’s resilience, the years I spent learning to care for others, and the beautiful tradition of the phin. This shop is my way of sharing that warmth with you. We are just beginning, but I hope this space becomes a place where you, too, can find a moment of peace and a reminder of your own strength.
